From professional restaurant kitchens to handcrafted luxury macarons, Lauren has spent almost a decade perfecting the art of patisserie. Every mmacaron is made using traditional Italian methods, premium ingredients and a passion for creating beautiful desserts that taste as good as they look.

How it all began

My patisserie journey began straight from school, working in high-end restaurant kitchens where I specialised in pastry and dessert creation. It was in these fast-paced, quality-focused environments that I discovered my passion for patisserie and developed the skills that continue to shape my work today.

 

Over the following years, I worked my way up to Head Chef at mmacaron, originally a patisserie café based in Ashby-de-la-Zouch. During this time, I refined my recipes, developed new flavours and built a loyal customer following through handcrafted desserts and luxury macarons.

When the café closed, I knew I wanted to continue what I had created and share my love for macarons in a new way.

Handcrafted Luxury Macarons

Today, I specialise in handcrafted luxury ganache macarons, created using traditional Italian methods and carefully selected ingredients.

Each macaron is made in small batches with a focus on flavour, texture and attention to detail. Alongside artisan market appearances across Nottinghamshire and the surrounding areas, I also create bespoke macaron towers and dessert displays for weddings, celebrations and special events.

For me, macarons are the perfect balance of creativity and precision, and I love creating products that feel both beautiful and memorable for every customer.
