meet the chef

My name is Lauren Dunkley. You may remember me from the Mmacaron Patisserie Cafe where I was Head Chef until we closed in 2022. I have been a pastry chef since I left school at Worksop College where I first learnt to cook.

Mmacaron…you might remember this name and think this rings a bell?

mmacaron was founded in 2021 by Mark Mcintosh, borne out of a love for artisan baking which dated back to his childhood.

We were a patisserie café  based in Ashby de la Zouch that began during the pandemic and closed in 2022.  Well we are back…but in a slightly different way…to suit a new way of life?!

We are back on the high street selling Mmacaron from selected stockists.  We are now online selling mail-order boxes of 6 Mmacarons.  We also continue to take custom orders for weddings and special occasions!

We have introduced a unique Mmacaron Kit Box with a tutorial video including everything you need  to make your own vanilla macarons!

Lauren Dunkley – head pastry chef

For 6 years now I have continued to love my passion for baking and eating! I particularly enjoy anything to do with precision and high-quality fresh ingredients. Before Mmacaron, I worked in restaurants, patisseries and cafés around the Midlands as a pastry chef and chocolatier.

If you visited the Mmacaron Patisserie Café you will know how passionate we all were about our macarons!  When an opportunity came to rethink and rebuild Mmacaron, I couldn’t turn it down!  So here we are after lots of hard work to get the business up and running again… bringing you what so many of you told us you were sad to lose when the café closed!
